Chorizo Inspired Breakfast Tacos

Tacos for breakfast? Yes, please! These tacos combine venison flavor with a chorizo inspired seasoning blend and scrambled eggs topped with cheddar cheese, diced onions, cilantro and avocado. Chorizo is traditionally a highly seasoned pork sausage that is very popular in both Mexican and Spanish cooking.  It works so well with venison, wild hog, or virtually any other game meat. These tacos definitely won’t disappoint whether you're at home in your kitchen or hosting a party for friends.

Chorizo


1 pound ground venison or wild hog (or other game meat)

1 tablespoon minced garlic

1 tablespoons ancho chili powder

1 tablespoon smoked paprika

2 teaspoons dried Mexican oregano (or regular oregano)

1 tablespoon ground cumin

1/2 teaspoon salt

1 pinch ground cinnamon

1 pinch ground cloves

2 tablespoons apple cider vinegar

 

Breakfast Tacos


1 medium onion, diced

3/4 cup chopped fresh cilantro

6 large eggs

1 tablespoon milk

1/2 teaspoon salt

1 tablespoon olive oil or butter

1 avocado, cut into wedges

1 cup Shredded cheddar cheese

8 flour tortillas, warmed

 


Recipe Directions



  1. Heat a large skillet over medium heat. Add ground venison and begin to brown, breaking it up as it cooks. Season with chorizo sausage seasoning and the apple cider vinegar then mix until evenly incorporated. Cook until venison is cooked through, about 7 minutes. Set aside while cooking the eggs.

  2. Whisk together eggs, salt and milk into a small bowl. Add to skillet and cook, stirring to create scrambled eggs, about 3 minutes. Remove from heat.

  3. Divide chorizo venison and scrambled eggs into the tortillas. Top with diced onion, avocado, cilantro and cheddar cheese, then serve.
