Bacon Wrapped Venison Steak Bites with Cowboy Butter

Everyone has tried bacon wrapped venison in some way shape or form. These Bacon Wrapped Venison Steak Bites with Cowboy Butter knock every other recipe out of the park. The venison on its own is juicy and delicious. Once it’s wrapped in crispy bacon and dipped into our homemade butter, you’ll be making this recipe every hunting season. Cowboy butter quickly became an internet sensation with its bold flavors. It’s bright, garlicky and mildly spicy- which you can adjust to your taste buds of course, but I think it has the perfect kick. Paired with the bacon wrapped venison, this recipe is full of flavor and would be perfect as an appetizer or even as a dinner. 

Ingredients

1-1.5 pound Venison Backstrap (or Tenderloin, Sirloin, Etc)

1 tablespoon Steak Seasoning 

1 pack Bacon (Not Thick Cut), Cut in Half

Cowboy Butter 

2 sticks Salted Butter (12 tablespoons)

4-5 Garlic Cloves, Minced 

1 medium Shallot, Finely Diced

½ Lemon, Juiced

2 tablespoons Fresh Parsley, Chopped

1 1/2 tablespoon Dijon Mustard

½ tablespoon Lemon Zest

1 teaspoon Paprika

1 teaspoon Dried Thyme (or 2 teaspoons Fresh Thyme)

1/2 teaspoon Cayenne

1/2 teaspoon Red Pepper Flakes

Recipe Directions

For the Cowboy Butter:

  1. Get out all of the ingredients and prep them so you can add them all at once.
  2. Add butter to a saucepan over low heat. As it melts, begin whisking to avoid burning. Once the butter has started to melt, add in the remaining ingredients and whisk to combine. Leave warm, whisking often, until ready to serve.

For the Venison:

  1. Preheat your grill to medium/high to high heat or your oven to 450 degrees.
  2. Line a baking sheet with foil with a baking wrap on top.
  3. Take venison and cut it into bite size pieces, approximately 1 inch cubes. Season all over with steak seasoning and mix until well coated.
  4. Use a half slice of bacon to wrap around the venison. Secure using a toothpick. Repeat with remaining venison pieces and place them onto the prepared baking dish with the seam side down.
  5. Bake in the preheated grill for 10-15 minutes, until the bacon starts to crisp and the venison is cooked. If needed, you can broil them for the last minute in your oven to crisp up the bacon.
